I’d go for 17” just in case you ever decide to upgrade your brakes. I think 3.0si brakes are bolt-on (and inexpensive) but would require 17’s at min.
Too low of an offset and you risk putting stress on the hubs. But if you’re not willing to add camber I don’t think you’ll even have the option to go that low so seems like a non-issue in your case.
Non-matching front to back won’t matter since you’re not AWD.
