For dry track days - Trofeo R. On Z4MC platform, I start with 26-28 psi cold, get them to 32 psi hot and keep them there, 33-34+ psi and they get squirmy and slide easily. If you drive at time attack pace, you can kill a set of tires in an afternoon, but they can also last multiple weekends if you aren't driving with excessive slip angle or drifting. I only street drive them to and from track, they do fine at street speeds in the rain, but wet braking at track isn't great.
Yokohama AO52 is supposed to be the new hot "200TW but not really" tire - similar grip to Trofeo R, less sketchy in the wet, and it's on my radar unless I get another set of cheap Trofeos.
