Looks great! New wheels, other mods, very nice. Razor thin gaps as in a sheet of paper or two or a few mm? I think it's the contact patch / top of the tire area that's going to move more than the sidewall further towards the rim. The closer to the rim itself the less flex there should be.
Only way to know for sure is to run it like you said.
