I have all my sorted mp3s in a single folder with 'artist - title (feat. artist)' format. Then I use mp3tag (windows only) to automatically transfer the filename into the mp3 tag (for the entire folder at once) which organizes it in itunes.
I used to change albums/cover art but realized how long it would take to get through everything and stopped.
