Has anyone ever swapped/installed a replacement hatch? If so how did you deal with the tailgate wiring harness (i.e. disconnect or separate without cutting)?

When I removed my hatch for rust repair and paint I just pulled the wiring harness completely out of the hatch. It is two wires taped together supplying the servo motor for the hatch release.

Is it simple as removing the plastic surround / trim from the hatch glass, and then detaching the harness?

Thumbs up

Yes.

Mark your hinges to make install easier. The hatch can be tricky to align.
