19" wheel tire size
I am currently running 245/35-19 (f) and 275/30-19 (r). Could I go to 235/35-19 and 265/30-19?

I wouldn't. Narrower contact patch and shorter sidewalls.
They would "fit", but you'd be giving up performance, tire durability/rim protection and looks. Stick with the sizes you have now.

they ditto to the post above. What is the reason for wants to go with smaller tire widths? Snow tires?
Also what are the wheel widths they are mounted on?
