Hartge has always been something for the niche market and has never been something for the average joe.
The Hartge Z50 is approximately $200000 including the price of a brand new Z4 which they convert to the Z50. But the only thing stock left on that car is the chassis. Everything else is ripped out and replaced.
There's nothing stock about that car and its priced well into the supercar territory, and not surprising considering its the same engine as the Z8 but with about 200kg less mass to push around.
I'll agree that for the money, its not worth converting a car to an M.
You're better off investing that money in parts that would make the car exceed the capabilities of an M, such as coilovers, or a supercharger (for a 2.5 you'd still be less power than an M), but for the money you could sure as hell make it handle better.
