I've ran 275 on 8.5" wheels before and it was fine. I've known some that ran 225 on 9.5" wheels too. It's just not a recommended size for the wheels. 245 is recommend for 8.5" wheels. The idea is not trying to stretch the tires if you don't have to. If you track, you want the proper size.
