Of course trimming fender liners won't be an issue since it'll be a race car.
245 should be fine, but you'll most likely need a spacer up front for anything wider than a 245. 265's maybe pushing it because not only are you going wider but you're also going taller (as compared to a 255/35). To be honest, I don't think you'd benefit much from a 265 on a 8.5, 255 seems perfect imo.

Btw as your car progresses and you get to the point of installing a cage, let me know. I'm thinking about doing a half cage but chances are you'll beat me to it so it'd be good to know what's involved, who you went with, etc.
