I have to say that Paul and Strong Strut has been one of the better vendor that I've dealt with. I told Paul about the issue on a Sunday afternoon and he shipped out a thicker set of shims with additional hardware on Monday morning! That is awesome customer support! Just wished more vendors/companies would be like this.
Just installed the 1/8" shims (in place of the 1/16"). I'll give it a few weeks to see whether that is sufficient. Hopefully, I won't need to add the 1/16" on top of the 1/8".

The only thing I didn't do is check the clearance with something like clay after installing the 1/8" shims. I did not notice any visible contact on the paint or hear anything unusual however.
