My girlfriend lives down there so I spend quite a bit of time in Deerfield. Check out Palm Beach International, they have a road course but dates are limited (although Wednesday is member nights so sometimes if you can make friends with a local shop they can get you in). That being said they have a killer kart track with decent rentals out there that I'd recommend trying out (they're in Palm Beach Gardens).
