No info on the diff mounts, but if it's coming out, and there's significant mileage on the car, I doubt there's much point in leaving the old ones in.
If you're dropping all that stuff out, it's also a pretty good time to refresh the stabilizer bar end links and bushings too. Access to change out the end links is much easier with the axles and exhaust system out of the way. That stuff doesn't need to come out to do it though.
When you got the diff redone, did you manage a mod or exchange to get a unit with a drain plug? Mine just has the fill hole, so I have to suction out everything I can.
