The 8-5" /18 ARC 8's have an offset of 38 but the ARC 7's have a 35 -- does it matter which one? I notice that it must be older stock but EAS has a set of them and the 8.5's are actually offset 45 which I think would keep them in more - which is preferable ?

Stock is 42. Since stock width is 8" and you're going to 8.5 you want anywhere from 35 - 40 roughly.
So you either want the
Arc-8 et38 or the
EC-7 et35.
If you got the 45's you'd have to get a 5-10mm spacer.
