The shims sit in a cup on the top of the valve spring retainer.
Stick the shim on the magnet, set it in the cup, and then slide the magnet off.
Watch out they don't' "tidily-wink".
Use your finger or a non-magnetic poker to hold it down as you remove the magnet.
I saw a YouTube video where he put grease on the shim to stick it in place, but a layer of grease may throw off the measurement.
If you can't get exactly the gap you want, err toward having the gap too big.
May tick a little, but you'll be assured the valve fully closes. Important that it does.
